Banana is a very subtle flavor. Getting enough flavor from real bananas takes a lot of bananas. We peel, slice, and roast the bananas to maximize the flavor and improve the color of the product. We get a very nice banana / toasted marshmallow flavor and caramel color. But it takes multiple macerations of hundreds of pounds of bananas to build the flavor to our standard. No other ingredients go into this rum, bananas and rum. The bananas are sweet enough and they add a great deal of water so proofing the rum down naturally takes place with each maceration. Bottled at 80 proof.
We use this in anumber of cocktails. One of the favorites is a classic tiki cocktail called "The Monkey's Uncle."
