Sunshine in a bottle!

 

Meyer Lemons are a bit sweeter and juicier than other lemons. A cross between a citron and a mandarin it is a deep yellow with a fagrant and flavorful zest.  We zest and juice the fruit to get the most flavor from the infusion.  Even the pith gets used in another product so nothing is wasted.

 

We usually get about a thousand pounds, zest and juice by hand, and infuse everything fresh.  It will rest in a barrel for a year or two before bottling.

 

Cane sugar to sweeten a bit, but not too much, because we want the full tart lemon flavor to shine.

 

This rum is great in club or tonic, ice tea, hot tea with a little ginger and honey, and great in a Mojito!
