Brandy is the result of distilling and barrel aging wine. Many wines don't turn out well enough to make it into a bottle. Those wines will get turned into vinegar or brought to a distillery to extract the alcohol and flavor essence of the grape that it came from. We provide this service to local wineries for a share of the distillate. We then send the wineries portion back where they use it to make ports or fortify dessert wines. Our portion gets put in a barrel and forgotton about for at least half a decade.
Barrel aging the wine distillate allows time and oxidation to do its magic. It makes the spirit smoother and preserves some of the fruit flavor in a spirit that tastes much like ann aged rum or whiskey in the sense of the influence of the barrel.
We use our brandy in place of rum or whiskey in many cocktails. Our brandy makes an excellent Old Fashioned or Manhatten. We make a Stillwagon Distillery Brandy Sour in the Hoaloha Tiki Room.
This 5 year old, 80 proof brandy is only available in the tasting rooms in Bandon, Reedsport, and Florence. Each batch is a unique single barrel bottling.
