Cinnamon is harvested from the inner bark of specific trees and has been in use for thousands of years.  We macerate the cinnamon sticks in rum for weeks to extract the flavor and color from the woody stick.  Our rum is an intense cinnamon flavor but without the "heat" of some other cinnamon products.  We add a bit of orange zest and lemon zest to compliment the cinnamon.

 

We rest this rum in oak barrels for a few years. the oak isn't noticable unless it isn't there.  Popular with cinnamon fans!

 

Try this Rum in warm or cold apple cider, hot chocolate, and of couse those tiki and other cocktails that call for cinnamon.
