Habaneros provide the heat, but most of the delicious pepper flavor is derived from the red, yellow, and orange bell peppers we infuse into this rum.  We throw in a few Serranos as well.  We begin with about 100 lbs of bells, 5 lbs of Habaneros, and 5 lbs of Serranos.  Inevitably I add another 25 pounds or so of bells to the infusion.  A bit of lime and lemon, and that is all that goes into this spirit.  

 

We bottle this Habanero Rum at a little over 100 proof to maintain the clarity of in the bottle.  Below 50 percent the pepper oils come out of suspension and cloud the rum.  This is a spicy rum with a lot of flavor!  We produced this rum specifically for Bloody Marys at the Bandon Gorse Blossom Festival, then continued production due to its popularity.

 

Habanero Rum is great in Bloody Marys, spicy mango cocktail, and great to cook with!
