Chilean Guava Gin

Ugni Molinae commonly known as the Chilean Guava is an unusual plant and fruit.  It looks more like a huckleberry bush, the blossoms are extremely fragrant, and the fruit tastes like strawberry with an evergreen finish.  When I first tasted this fruit, I decided it would be an excellent compliment to a gin.  The flavor is so delicate that it has to be infused after the gin is distilled which gives it the beautiful champagne color.

 

The fruit isn't available commercially, so I have to grow it to make a few cases of this gin every couple of years.  It is only available occasionally and seasonally.  Rare and scarce it is only available in our tasting rooms.  Great in tonic, this gin also makes a stellar Gimlet.
