Whiskey making requires much of the beer making equipment and process.  Our distillery is small and set up for making rum.  So we partner with a local brewery to make our whiskey.  They "mash" a peat smoked malted barley, creating the "wort,"  then ferment it at the brewery.  We bring the unhopped "beer" to the distillery for distillation and barrel aging.

 

Our Single Malt Whiskey is aged in new, charred, American Oak barrels for at least 5 years.  This gives the whiskey time to mature, become smooth and flavorful.  Each bottling is a single barrel and  bottled at 80 proof.
