Dark Rum and how it is made is a closely guarded secret by each distiller. They wil tell you they do this and that, and the barrel produces the flavor.  Well, it took me a while to conclude they were all sending me on a wild goose chase.

The barrel has a huge influence on the flavor and color which is true.  But there are additions to give each dark rum its characteristic signature flavor.  Ours is subtle with notes of vanilla, coffee, cacao, and caramel.  You might be able to pick up a few other flavors if you have an acute palate.

This rum is aged over 6 years, and we have a few bottles from a special barrel that are over 10 years old. Our standard Dark Rum is 80 proof, and the 10 year is bottled at Navy Strength, 114 proof.

Both are exceptional sippers and make great cocktails.  I really like the 10 year in an Old Fashioned!
